Wheat Sweet Pancake


My mother make Wheat pancakes, by soaking whole wheat over night and grinding it with coconut, jaggery one of my favorite pancake :)!!I love the taste of grinded wheat. But here I have is a instant wheat flour pancake, with some simple changes.

This is simple and instant made pancake, which i wish to send it to three events :)!!

For Raaga's - WBB Express Breakfast for really quick breakfast, this is one of the quikest i feel :)!! Nice event Raaga for simple breakfast.

For Paajaka's - Sweet series event of Puran poli or sweet chapathi/roti.

For Susan - Pancakes on Parade event.


Ingredients

1 cup Wheat flour
1 cup Milk
1/2 cup Jaggery/Sugar/Brown sugar(i uesd jaggery)
1-2 tblsp Coconut powder/freah grated coconut(i used coconut powder)
1/2 tsp Caradamom powder
Ghee/butter
pinch of salt


Ingredients

1. Mix all the ingredients. The batter must be as any normal dosa batter, add more or less milk depending on the consistency.
2. Heat a tava, spread ghee/butter, pour the batter to a round shape.
3. Fry both the side. Wheat sweet pancake is ready to be served.

Eggless Banana Yogurt Cake

Eggless Banana Yogurt Cake


This wonderful cake is Meera's recipe Eggless Banana Cake , thank you so much for such a nice eggless cake :)!!.It came out very good. I just added some Almond and cashews chopped instead of Doodh masala. This cake is really easy and its oil or butter free. Wonderful Meera for such a nice cake.

I'm sending this cake to Siri's event for Frozen Yogurt cool summer. Enjoy hosting Siri.


Ingredients

1 cup mashed Ripe Banana
2 cups rawa
1 cup plain yogurt
1 cup milk
3/4 - 1 cup sugar
3 cardamoms, peeled/crushed
1/2 tsp baking soda
A pinch of salt
1 tbsp Almond and Cashews chopped


Method

1. Mash bananas. Add yogurt, milk, sugar. Whisk together.
2. Mix salt, baking soda and raw.
3. Add the dry mixture into the wet one.Stir well so no lumps are formed.
4. Add chopped almond, cashews and crushed cardamoms,stir. Cover and keep aside for 1 hour.
5. Preheat oven to 350 F. Grease & pour the batter in the pan. Bake for 30 - 45 minutes.(It took 45 minutes for my cake, as Meera told it depends on the oven :) !!)

Akki Rotti/ Rice Roti

Akki Rotti/ Rice Roti


This is one of my favorite rotti my mother makes. In kannada 'Akki Rotti' means 'Rice Roti'. This is very simple and easy to make and tasty too :D !!

Sending this to Suganya for her event A Fruit a month - Coconut.

Here it goes..


Ingredients

1 cup Dosa Rice
1/4 cup fresh grated Coconut
Salt as per taste
Oil/ghee to make Rotti


Method

1. Soak rice over night in water.
2. Next day grind the rice to a thick paste by adding little water.
3. Now add grated coconut, salt to the grounded paste.
4. Heat the tava, spread 1/2 tsp of oil. Take hand full of the roti mixture flatten it on the hot tava to a round roti shape.
5. Cook both the side.
6. Now Akki Rotti is ready to be served with chutney :D.. Enjoy !!

Charmuri/Masal Mandakki

Charmuri/Masal Mandakki


This is a street food of my home town Mangalore. Charmuri/Masal Mandakki, 'Charmuri' means 'Mumra/Puffed Rice' in local language of Mangalore "Tulu", 'Mandakki' is Kannada word for 'Mumra/Puffed Rice'.

This is a street food you can find any where in Mangalore, its famous during the festival fair, specially like Dasara or Shivratri fair. I used to eat it all the occation specially returning back from the temple Charmuri and ice cream was a must :) !!
Its very simple and easy chat. This is made with coconut oil, which gives a special taste to the chat.. But i used peanut oil as here i cant find coconut oil for cooking :( !!
This is my entry to Sia - Monsoon Spice, for MPB - Street Food event. Thank you for the wonderful event and for extending the days :)!!. Really enjoyed participating.

Recipe Idea from Ramya's - Mane Adige - Churmuri, with some variation.


Ingredients

1 cup Puffed rice
2-3 tblsp Onion chopped
2-3 tblsp Carrot grated
2-3 tblsp Raw Mango grated
2-3 tblsp Peanuts roasted
1 tblsp Cilantro chopped
1 tsp Red chilly powder
1-2 tblsp Coconut/Peanut Oil
Salt as per taste
pinch of Turmeric





Method

1. In a large blow take oil, add turmeric, chilly powder, salt, grated carrot, mango, chopped onion, cilantro mix them all.
2. At last add puffed rice, roasted peanuts mix.
3. Serve and eat it immediately before it soften.

Peanut Kabbab

Peanut Kabbab


I'm back.. :) !! I was enjoying my summer. Today i have Peanut kabbab from my recipe book, this is what i saw in one tv show called 'Adige Aramane' means 'Cooking Palace' in E-tv Kannada. I used to take a book and sit in front of that.. :P, i miss it now :( !! So now just going through my collection of recipes. Peanut Kabbab is simple and very tasty.

I'm contributing this recipe to Sangeeth's - Eat Healthy - Fiber Rich event. Mint and cilantro have fiber in them bur not rich in fiber I guess. I wish she accepts this recipe :) !!. Its an healthy event Sangeeth, enjoyed participating this event.

Here is the recipe..


Ingredients

1 cup boiled Peanuts
Salt as per taste
1/4 cup Bread crumbs
Oil to deep fry



To Grind

3-4 tbsp Mint/Pudina leafs
3-4 tbsp Cilantro leafs
1 tbsp Ginger chopped
1 tbsp Garlic chopped
6-7 Green Chillies
1 tsp cumin seeds


For Batter

2-3 tbsp All purpose flour/Maida
1-2 tbsp Water
pinch of Salt








Method

1. Boiled peanut: Wash the raw peanuts and pressure cook for 2-3 whistle. Croase ground the peanuts in the mixer for 2-3 rounds. (not paste)
2. Grind all the grinding ingredients to a thick paste by adding little water.
3. Now mix the croase grounded peanuts to the grounded thick paste, salt.
4. Make small ball or give shape of your desire.
5. Now mix the maida, salt and water normal batter so that to dip the kabbab balls in them.For a coating.
6. Now roll the coated kabbab in bread crumbs and deep fry in Oil.
7. Peanut Kabbab is ready to be served with tomato sauce or mint/coconut chutney.. Enjoy as I did :)!!

This is just my entry for the team effort of Jugalbandi A special edition to raise the found for Briana Brownlow @ Figs With Bri. Bri was diagnosed with breast cancer two and half years ago. A mastectomy, chemotherapy and two years of relatively good health later, the cancer is back. It has metastasized to other parts of her body. At the age of 15, Bri lost her 41-year old mother to the disease. Now, she’s waging her own war against breast cancer. Read more...

Here is my enrty Lemon Rice/Chitranna. Chitranna in Kannada. Here it goes..



Ingrediants

1 cup cooked Rice
1-2 tbsp Peanuts
1/2 tsp Mustard seeds
1/2 tsp Urid dal
1/2 tsp Chana dal
1/2 tsp Termeric powder
2-3 tbsp Lemon juice
2-3 tbsp Cilantro chopped
1-2 tbsp Oil/ghee
Curry leafs
Salt as per taste


Method

1. Heat oil/ghee in a pan.
2. When heated up add mustard, when it pops up add chana dal, urid dal, peanuts, curry leafs. Fry a bit untill peanuts are fried.
3. Now add termeric, salt, cooked rice and mix well.
4. At last add lemon juice and cilantro chopped. Serve hot with curd or raita or just as it is.
