My mouth was like wide open.. What ?? Is it true.. When i checked her blog, a wonderul Pink Teddy Bear cake waiting for us both !!
U feel as if a real cute little Teddy is siting in front of you !!

Lovely Anamika.. Really no words to say how happy and excited i'm..
As you have considered my small word and made it.. Choti choti baatien.. Gives you tons of happiness is true !! ( I came to konw that today :D !!)

As Anamika explains in her post..

Hi friends, today is my Parents 25th Wedding Anniversary... So this post is to my parents..My mother always had a wish of putting there snap in a local paper i.e Udayawani, as she used to see others couple celebrating there 25th wedding anniversary,as there son or daughter used to wish there parents. I'm not able to do that, but just trying to fulfill my mothers wish, by wishing through my blog, not only the local people,all over the world can wish on there Anniversary !! I'm missing the function back home, but thought of sharing with my blog friends...as i don't want to miss !!

Celebrating my parents anniversary with this sweet dish..


CORN DELIGHT


Ingredients

1 cup Corn flour
2 cup Milk
1 cup Water
1 cup Sugar
2 tsp Ghee
2 tsp Custard powder
1 tsp Cardamom powder
1 tbsp Pista chopped


Method

1. Mix the corn flour, custard powder in water.
2. Mean while heat the milk, in thick bottom pan.
3. When milk starts boiling add the corn flour mixer, Sugar, Ghee and keep on stiring. As the corn flour starts thickening.
4. At last add caradamom powder. Transfer the mixer in a grease plate,granish with chopped pista and allow it cool for about 1 hour, cut shapes of your choice.
Corn delight is ready to be eaten.. !!

Chole and Weekend Party

Chole and Weekend... Party !!


Hi friends.. I was just busy in a small weekend party in my house.. So just wanted to share with u all what did i cook :) !! I cooked most of the south Indian dishes has all my friends were north Indians, They all love south indian dishes.. Lucky :D !!As one of my friends parents are leaving back to India(A reason to party :) !! ) , we arranged a small party for 12-15 friends...

The menu is as follows..

Chole

My version of Chole... I had to skip Onion and Garlic as one of the family dont have them !!

Ingredients

1 cup Kabul chana soaked and cooked (soak overnight)
1 cup Tomatoes Chopped
1/4 cup Onions Chopped
1 tbsp Ginger Garlic paste
1/4 tsp Turmeric Powder
1 tsp Chole Masala
1/2 tsp Red chilli powder
1/2 tsp Coriender and Cumin powder
1 tbsp Cilantro Chopped
2 tbsp Oil
salt to taste


Method

1. Heat the oil and add Ginger garlic paste. Saute for few mintues.
2. Add the Onion ,saute for sometime till the onions are almost transparent.
3. Add the tomato, bit of salt and simmer for 2 to 3 minutes. til the tomatoes are cooked. Smash the tomatoes, make a thick gravy.
4. Now add all the masalas, Kabul chana, salt. Cook for another 5 minutes .(add water as how thick you want the gravy to be, while cooking)
5. Garnish with cilantro Chole is ready to serve.
Note: Can also add 1/4 tsp of Amchur powder to increase its taste.

This was just Gits Rasmalai..Which came out good !! To reduce the risk of making Rasmalai :) !! Can find in any Indian store.


Missed main dish Rice.. No need of the recipe, as every one know to cook rice :) !!

Vangi Bath

Vangi Bath



Simple and tangy Egg plant(Brinjal) rice, in kannada its called Vangi Bath. You can use long or round brinjal, I prefer MTR Vangi Bath masala powder as it is readly available in store :) !! No need to make it at home.. I make the way it is explained on the pack, it turns out good !! I like the smell of Vangi bath.. but my husband doesnt :( !!

I'm sending this to Pooja's - VOTW Brinjal , who makes you to think and make creative dishes!! Lovely events :)!!

So here is my version of Vangi Bath.. which is common recipe in south India, specially in Bangalore and Mysore !! lol !!



Ingredients

1 cup Cooked Rice
1/2 cup Round Egg plant sliced
1-2 tblsp Onions sliced
1/4 cup Carrot and Beans sliced
1 pinch turmeric
1-11/2 tbsp Vangi Bath Masala (I prefer MTR)
1 tsp Tamarind Paste (mixed in 1-2 tblsp of water)
1/2 tsp Jaggery
salt as per taste


Tempering

2 tbsp Oil
1/2 tsp Mustard seeds
1/2 tsp Urad dal
Curry leaves
Cashew nuts (optional : slighty fried in ghee)






Method

1. Heat oil in a pan put the tempering ingrediants.
2. After tempering fry onions for 1-2 minutes.
3. When onions are tansperent add the sliced Egg plant, Carrots, Beans,sprinkle pinch of turmeric fry for 4-5 minutes till vegetables are cooked .
4. Now add the Vangi bath masala, tamarind water, jaggery and cook for 1 minute.
5. Mix the cooked rice gently.. Garnish with cashews.. Vangi Bath is ready to to served !!

Palak Rice

PALAK / SPINACH RICE


Palak rice is what I came to know from one of my friend. This is simple as no much varities of vegetables in them. The smell and the taste of palak leaves itself is just enough to make this recipe yummy :)!!...

I wish to send this recipe toMeeta's - What's for lunch, Honey? for the event Monthly Mingle - One Dish Dinner. Thank you for hosting this event Meeta. Enjoed it !!

I'm not keeping well from past two weeks... so was not able to post recipes on a regular basis...:( and check my blog buddy's recipes.. !! I miss blogging a lot because of my weekness.. Hopping to get well as soon as possible !! so that I can continue blogging and cooking... :)!!

Here is my Palak rice version.. enjoy !!


Ingredients

1 cup Basmathi Rice
1/2 cup of Palak/ spinach leaves chopped.
1/4 cup Potato cubes
1 medium size Tomato cubes
1 onion sliced
1-2 Clove, Caradamon, Cinnamon stick, Bay leafs
1/2 tsp Cumin seeds
1 tsp Red Chilly powder
1/2 tsp Tumeric powder
1/2 tsp Garam masala powder
1 tsp each of ginger and garlic paste
2-3 tbsp oil
Salt as per taste
2 cup Water






Method

1. Heat oil in the presser cooker. Then add the spices,cumin seeds, ginger garlic paste, Onion, fry them for 1-2 minutes.
2. Now add the chopped spinach and basmathi rice and again fry for 1-2 minutes.
3. Later add cubed potatoes, tomatoes, chilly, turmeric , garam masala powder, salt and water and pressuer cook untill 2 whisle.
4. Palak rice is ready to be enjoyed with salad or curd....
Note : Adjust the spices and masalas as per your taste.
