Shahi Paneer

Shahi Paneer


Shahi Paneer or Cottage Cheese Curry is a popular vegetarian delight. Shahi Paneer tastes good as well as stands high on nutrition chart. Try this royal dish with Archys recipe Book now. Shahi Paneer rocks with Roti or Chapathi or Pita bread or Naan.

Making time: 45 minutes.
Serves: 4


Ingredients

150 gms. paneer (cottge cheese) cubes
2 tbsp. ghee or butter
1 onion chopped into strips
1/2tbsp piece ginger chopped fine
1/2tbsp piece garlic chopped fine
3 tomatoes chopped fine
2 cardamoms crushed
5-6 cashew nuts paste - blend it using bit of water
1/4 cup beaten curd
1/2 tsp. red chilli powder
1/2 tsp. garam masala
salt to taste


To garnish

1 tbsp. grated paneer
1 tbsp. chopped coriander




Method

1.Heat half the ghee. Add onion,ginger and cardamom. Fry for 3-4 minutes.
2.Add tomatoes and cook for 7-8 minutes, covered. Let it cool fro 5-10 minutes.
3.Blend it a smooth paste .
4.Mean while fry the paneer cube slightly in the 1/2 tbsp of ghee. Keep aside.
5.Now heat the remaining ghee, add blended gravy, cashew nut paste, red chilli powder, garam masala, salt and cook for 3-4 minutes.
6.Add curd and cook for 5 minutes.Boil to get a very thick gravy.
7.Just before serving, heat gravy, add milk paneer and boil for 3-4 minutes.
8.Garnish with chopped coriander and grated paneer.

Maize Roti

Maize Roti / Makkai Ki Roti / Jola Rotti


This roti is made all over india. In karnataka we call it 'Jola du Rotti' in kannada, in north its called 'Makkai ki Roti' in Hindi. This is really good from health point of veiw. Then those fed of chapathi daily can try this roti for a change. This roti hold good with any spicy subji. I got this recipe from one of my recipe book, So here the recipe follows,


Ingredients

1 cup Maize flour
1 cup Maida/All purpose flour
1 tsp Salt
1 pinch cooking soda
Warm water - to make the dough
Oil - to fry rotis






Method

1.In a bowl mix maize flour, maida flour, salt, cooking soda.
2.Using Warm water make a soft dough.
3.Make 10 balls and roll it into tin chapathis.
4.Heat the tava and fry the rotis both side using oil like chapathi.

Makes - 10 Rotis

Note:
Maize flour doesnt have sticking feature so Maida/ All purpose flour is used to make rotis.

Pumpkin Halwa

This dessert recipe is picked from Mahanandi's Blog .With a slight change in the recipe. Actually it was Pumpkin Burfi, I made it halwa. Hope u enjoy this recipe.

I made this Pumpkin Halwa on the ocassion of Deepavali. It came out good. So here is the recipe below....


Ingredients

2 cup grated Yellow Pumpkin
8-10 Almonds
2 cup whole Milk
1 cup Sugar
1 tbsp Ghee
1 tsp Rose water
1 tsp cardamom powder


Almond powder

Soak half-cup almonds in warm water for about 2 hours. Remove the skins and make a smooth powder in a food processor.


Milk-Sugar syrup

Meanwhile to prepare milk-sugar syrup take 2 cups of whole milk and 1 cups of sugar in a big, thick-bottomed vessel. Cook the mixture until is gets thick and is reduced to about half of the original quantity. Takes about 30 to 35 minutes.






Method

1. In a big wide bottomed vessel, heat about 1 tbsp of ghee on medium heat.
2. Add the grated pumpkin to the melted ghee.Gently mix and cook the pumpkin. Cook for about 20 minutes, stirring in between, until the raw smell of pumpkin disappears and color changes from yellow to orange-yellow.
3. Add the almond powder and milk-sugar syrup. Now cook for about 5-7 min.
4. Add cardamom powder and rose water , mix , take away from the heat.
5. Halwa is ready to be Served. Can be served hot or cold.

Eggless Apple cake

Eggless Apple Cake


This was my second attempt for the eggless cake. Apple Eggless cake is very simple and easy to make and even the taste wice its good.
So here is the recipe below.


Ingredients

1 cups Maida (All purpose flour)
1 peeled & grated Apple
1/4 cup Butter
1/2 cup Fine Sugar
1/2 cup Milk / Milkmaid
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Vannilla essence






Method

1. Mix all dry ingredients - flour, baking soda and powder.
2. Mix the wet ingredients - butter and sugar first. Then add the grated apple, vanilla essence and add milk.
3. Now add flour spoon by spoon and mix well. If the batter is too tight can add more milk.
4. Pour the cake mixture to the baking tray of ur choice.
5. Bake it in a preheated oven at 350° F for about 30 - 35 minutes.
