Basic Pizza Dough

Basic Pizza Dough


Pizza dough Ingredients

1 cup All purpose flour(maida)
1/2 tsp active dry yeast
1/2 tea spn sugar
1/2 tea spn salt
1 tsp oil
Water about 1/4 cup




Method

1.In a small bowl, sprinkle the yeast on the warm water, and stir to dissolve it. Set aside until the yeast starts forming bubbles in about 5 minutes.
2.Now add salt and sugar to the yeast water.
3.Pour the flour into a large bowl and add the above mixer, oil and mix well like a chapathi dough.
4.Transfer the dough into the bowl.Cover the bowl with a kitchen cloth, and set the bowl aside for approximately 1½ – 2 hours until the dough doubles in volume. The time required for rising will depend on the strength of the yeast and the temperature of the room.
5.On the work surface, using a rolling pin and your hands, shape dough into a thin round layer.
6.Now tranfer the shapped dough to the pizza pan.(i used silver foil to make pizza)
7.Now pizza is ready to recieve the topping i.e Pizza Sauce and vegetables of your choice(I used tomato and Broccoli).
8.Sprinkle the cheese on top of the pizza sauce, vegetables.
9.Bake the pizza in the regular oven in 400F for about 25 - 30 mintues.

Pizza Sauce



Pizza sauce Ingredients

5 tbsp Tomato sauce
1 tsp Red chilly sauce
2 tbsp Onion paste
1/2 tsp Garlic paste
1 tbsp Oil/Butter
1 tsp Red chilly powder
Salt, pepper - to taste






Method

1.Heat oil or butter in a pan over medium heat.
2.Add onion paste and saute until the onions begin to sweat. Do not brown.
3.Add the garlic paste and stir once.
4.Add water, tomato sauce, chilly sauce and bring to boil.
5.Add salt, pepper .
6..Mix and cook till saucy consistency for about 2 min.

Methi Masala Idly

Methi Masala Idly


This Methi masala Idly is popular in Karanataka. I came to know from my Amma (Mother inlaw). This is a healthy food as methi leafs are added o the Idly.
So for a change you can try this recipe.

Ingredients

Idly batter
1 cup methi(Fenugreek) leaves chopped
1 tsp Vegetable oil


To Grind

4 tbsp grated Coconut
3-4 Red chilly
1/4 tsp coriander seeds
1/4 tsp Jeera(cumin) seeds








Method

1. Fry Red chilly, coriender seeds, jeera seeds in 1 tsp of oil.
2. Grind coconut and fried items. Keep aside the granded paste.
3. Mix chopped Methi leaves and grinded paste to the Idly batter.
4. Then make idlys in the idly steamer. Steam the idlys on high for 10 minutes.
5. Serve it with coconut chutney or ghee.

Mango Coconut Burfi

Mango Coconut Burfi


Mango coconut burfi is similar to coconut burfi just add mango pulp just for a change. And see the difference in taste. It taste's slightly Tangy and sweet just like Mangoes but with coconut.



Ingredients

1 cup Mango pulp
11/4 cup coconut powder
½ cup condensed milk
1/4 cup sugar(optional)
Ghee 3 tsp
1 tsp cardamom powder







Method

1. Heat 1 tablespoon ghee and add coconut powder. Fry it for 1-2 minutes till you get the nice coconut smell. Don't brown the coconut powder. This frying is just to take out the rawness of coconut if any. Keep this aside to cool it.
2. In the same non-stick pan,add 1 cup canned sweetened Mango pulp and 2 tsp Ghee,stir until you see the ghee on top and the sauce thickens. For about 10-15 minutes.
3.Now Add the fried coconut powder,Condensed milk,sugar,cardamom powder and mix well. Keep stirring until they form a lump.
4. Add to a greased plate,pat lightly to flatten.
5. Keep it in the freezer for around one hour. Later cut them to the desired shape

Note:
1.I used coconut powder that you get easily in any Indian grocery store.
2.Mango pulp can be kesar or alfonso.
3.Sugar is optional, if you feel condensed milk and mango pulp will make the sweetness needed can skip sugar.

Poha snack - Chewda


This is one of the famous snack of south India. Its very easy simple recipe.


Ingredients

2 cup paper avalakkki(poha)
4 tbsp peanuts
3-4 Garglic cut into small peices
3 tbsp Dalia/putani(hurikadale)
5 tbsp coconut oil(or vegetable oil)
1 tsp mustard seeds
1 tsp urad dal
2 stands curry leafs
1 tsp red chilly powder
1/2 tsp turmeric powder
1 tbsp sugar
Salt to taste







Method

1.In a tava add 3 tbsp oil and add Avalakki.
2.Fry, till it becomes crisp. Keep it a side.
3.In a tava heat remaining 2 tbsp of oil.
4.Add mustard seeds, when it start to pop, add urad dal, garlic. sout for 2 min.
5.Now add peanuts, again sout til peanuts are roasted.
6.Add putani, curry leafs. remove from the heat.
7.Now add chilly powder, turmeric powder, sugar, salt and mix it.
8.At last add fried avalakki, mix it , let it cool.
9.Transfer it to a serving bowl or store it in a air tight container.

Note:
1.This last for around one week when stored in a air tight container.
